Lamb Roast

Ingredients:
1 rolled lamb joint 
1/2 bag small peppers 
3 potatoes 
3 tablespoon olive oil 
Salt free garlic & herb seasoning to taste 
pam Olive oil spray 
Preheat oven to 350 F.

Directions:
Grab a deep roasting pan, disposable will do as well. 
In pan dry lamb with paper towel and pour olive oil over it. add garlic & herb seasoning and rub well into the lamb. 
Peel and chop potatoes into bite size pieces, wash and chop the peppers into the same sized pieces s the potatoes. spray with pam olive oil and shower with more of the garlic & herb seasoning. 
Put the lamb in the oven, it will take about 1 1/2 to 2 hours. When done cooking place on stove or counter to rest until ready to eat.....
