Guava Crumb Bars


Ingredients


2 ½ cups Plain flour
2/3 cups Granulated sugar
½ tps Salt
16 tbs Unsalted butter, softened plus
2-3tbs Unsalted butter, softened
¼ cup Brown sugar
½ cup Oats
¾ cup Chopped walnuts
3-4 Guava slips (tinned), finely diced
1 jar Guava Jam


Directions:


Preheat oven to 375 degrees. Grease a 9”x13” pan and fit a length of greaseproof paper across it, to provide handles for lifting the full slab out of the pan.

1. In bowl of standing mixer fitted with flat beater, mix flour, granulated sugar, and salt at low speed until combined, about 5 seconds. With the machine on low, add 16 tablespoons butter one piece at a time; then continue mixing on low until mixture resembles starting to clump, 1 to 1 1/2 minutes. You can also do this by hand but it will take a bit longer.

2. Measure 1 1/4 cups flour mixture into separate medium bowl and set aside; distribute the remaining mixture evenly in bottom of prepared baking pan. Using hands or flat-bottomed measuring cup, firmly press mixture into even layer to form bottom crust. Bake until edges begin to brown, 14 to 18 minutes.

3. While crust is baking, add brown sugar, oats, nuts and chopped guava to reserved flour mixture; toss to combine. Work in remaining 2-3 tablespoons butter by rubbing mixture between fingers until butter is fully incorporated. Pinch mixture with fingers to create hazelnut-sized clumps and then set aside.

4. When the crust is baked (a light golden brown) remove from oven and immediately gently and evenly spread with the jam, using an offset spatula. Then sprinkle the crumble topping evenly over filling (do not press it down into the jam). Return the pan to oven and bake until topping is deep golden brown and filling is bubbling, 22 to 25 minutes.

5. Loosen the edges with a sharp knife and then leave to cool. Once cool put in fridge until nice and firm, then it will be easy to lift them out of the pan and cut into bars or squares.
