Keto Baked Salmon with Pesto

Instructions are for 1 serving. Please modify as needed.

  1. Place the salmon skin-side down in a greased baking dish. Spread pesto on top, and salt and pepper to taste.
  2. Bake in oven at 400°F (200°C) for about 30 minutes, or until the salmon flakes easily with a fork.
  3. Meanwhile, stir the sauce ingredients together. Pesto, mayonnaise and yogurt.

Simple sides are just as elegant! Broccoli – quickly steamed or roasted with just a touch of caramelization – pairs beautifully with this salmon dish. Or try a hearty salad with greens, pecans, seeds, and a healthy dose of fresh, homemade vinaigrette.
